Speedy Pizza Quesadillas

 




Ingredients:

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce or marinara sauce
  • 1/4 cup sliced pepperoni (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Olive oil or cooking spray for greasing

Instructions:

  1. Prepare the Quesadillas:

    • Lay out two flour tortillas on a clean surface.
    • Spread a thin layer of pizza sauce over each tortilla, leaving a small border around the edges.
  2. Add Toppings:

    • Sprinkle shredded mozzarella cheese evenly over the sauce on each tortilla.
    • If using, add your desired toppings such as sliced pepperoni, black olives, diced bell peppers, and diced onions.
  3. Season:

    • Sprinkle dried oregano and dried basil over the cheese and toppings.
  4. Assemble the Quesadillas:

    • Place the remaining two flour tortillas on top of the cheese and toppings to create two quesadilla "sandwiches."
  5. Cook the Quesadillas:

    • Heat a large skillet or griddle over medium heat. Lightly grease the skillet with olive oil or cooking spray.
    • Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
    • Repeat with the remaining quesadilla.
  6. Slice and Serve:

    • Remove the quesadillas from the skillet and let them cool for a minute or two.
    • Use a sharp knife or pizza cutter to slice each quesadilla into wedges.
    • Serve hot and enjoy your speedy pizza quesadillas!
