Grilled Peach and Burrata Salad with Honey Balsamic Vinaigrette
Ingredients:
- 4 ripe peaches, halved and pitted
- 8 oz burrata cheese
- 4 cups arugula or mixed salad greens
- 1/4 cup chopped walnuts or pecans
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
For the Honey Balsamic Vinaigrette:
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup extra virgin olive oil
- Salt and pepper, to taste
Instructions:
Preheat your grill to medium-high heat. Brush the peach halves with a little olive oil and season with salt and pepper.
Place the peach halves cut-side down on the grill and cook for 3-4 minutes, until grill marks form and the peaches are slightly softened. Flip the peaches and grill for an additional 2-3 minutes. Remove from the grill and let cool slightly.
