Ingredients:

  1. Bunny Biscuit Base:

    • 1 can refrigerated biscuit dough
    • 8 slices bacon, cooked and crumbled
    • 1 cup shredded cheddar cheese
    • 6 large eggs
    • ¼ cup milk
    • Salt and pepper to taste
    • Cooking spray
  2. Decorations:

    • 2 slices of cheese (for eyes)
    • 1 cherry tomato or red pepper (for nose)
    • Fresh parsley or green onion (for whiskers)
    • Additional cooked bacon strips (for ears)
    • Optional: mini marshmallows or whipped cream (for tail)

Instructions:

  1. Preheat oven and prepare baking dish:

    • Preheat your oven to 375°F (190°C). Spray a 9x13-inch baking dish with cooking spray.
  2. Prepare bunny biscuit base:

    • Open the can of refrigerated biscuit dough and separate into individual biscuits. Flatten each biscuit slightly with your hands.
    • Arrange the flattened biscuits in the prepared baking dish to form the shape of a bunny, with overlapping edges to create a continuous surface.
  3. Layer ingredients:

    • Sprinkle the crumbled bacon evenly over the biscuit base, followed by the shredded cheddar cheese.
    • In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture evenly over the bacon and cheese layer.
  4. Bake the brunch bake:

    • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the egg mixture is set in the center.
  5. Decorate the bunny:

    • While the brunch bake is baking, prepare the bunny's face decorations. Use a sharp knife or kitchen shears to cut two small circles out of the cheese slices for the eyes. Cut a small triangle out of the cherry tomato or red pepper for the nose. Chop the fresh parsley or green onion into small pieces for the whiskers.
    • Once the brunch bake is done baking, remove it from the oven and quickly add the cheese eyes, tomato or pepper nose, and parsley or green onion whiskers to the bunny's face. Use additional cooked bacon strips to form ears on the top of the bunny's head.
  6. Serve and enjoy:

    • Allow the Easter Bunny Biscuit Brunch Bake to cool slightly before slicing and serving. Garnish each serving with a dollop of whipped cream or a mini marshmallow "tail" if desired.
    • Gather your family around the table and enjoy this adorable and delicious Easter brunch creation together, celebrating the joy of the season and the bonds of family and togetherness
