Guinness Beef Stew

Ingredients:

  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 2 potatoes, peeled and diced
  • 2 cups beef broth
  • 1 cup Guinness beer
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat oven: Preheat your oven to 325°F (165°C).

  2. Coat the beef: In a large bowl, toss the beef cubes with the flour, salt, and pepper until evenly coated.

  3. Brown the beef: Heat the olive oil in a Dutch oven or large oven-safe pot over medium-high heat. Add the beef cubes in batches and brown them on all sides, about 5 minutes per batch. Transfer the browned beef to a plate and set aside.

  4. Cook the aromatics: In the same pot, add the diced onion and minced garlic. Cook until softened, about 3-4 minutes.

  5. Add vegetables and deglaze: Add the sliced carrots, celery, and diced potatoes to the pot. Cook for another 5 minutes, stirring occasionally. Pour in the Guinness beer and beef broth, scraping the bottom of the pot to loosen any browned bits (this adds flavor to the stew).

  6. Add remaining ingredients: Stir in the tomato paste, bay leaves, and dried thyme. Return the browned beef cubes to the pot and stir to combine.

  7. Braise in the oven: Cover the pot with a lid and transfer it to the preheated oven. Let the stew cook in the oven for 2 to 2 1/2 hours, or until the beef is tender and the flavors have melded together.

  8. Serve: Remove the bay leaves from the stew. Taste and adjust seasoning with salt and pepper if needed. Ladle the Guinness beef stew into bowls, garnish with chopped fresh parsley, and serve hot.
