Ingredients:
- 1 can of Spam, diced
- 3 cups cooked rice (preferably day-old)
- 2 eggs, beaten
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 green onions, sliced (optional for garnish)
- Salt and pepper to taste
Instructions:
Cook the Spam: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the diced Spam and cook until it’s crispy and browned, about 4-5 minutes. Remove the Spam from the skillet and set it aside.
Scramble the Eggs: In the same skillet, add the beaten eggs and cook, stirring occasionally, until they are fully cooked but still soft. Remove the eggs from the skillet and set aside with the Spam.
Cook Vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Sauté the chopped onion and minced garlic for 2-3 minutes until the onion is translucent. Add the peas and carrots, and cook for another 2 minutes.
Combine Ingredients: Add the cooked rice to the skillet, breaking up any clumps. Stir in the soy sauce and sesame oil, making sure everything is well coated. Return the cooked Spam and scrambled eggs to the skillet, and mix everything together.
Season: Cook for another 3-4 minutes, stirring frequently, until the rice is heated through and slightly crispy. Add salt and pepper to taste.
Garnish and Serve: Garnish with sliced green onions if desired, and serve hot.
