Ingredients:

- 1 small head of broccoli, cut into florets
- 1 medium zucchini, sliced
- 1 bell pepper (red, yellow, or green), sliced

- 1/2 cup sliced mushrooms
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce or tamari (for a gluten-free option)
- 1 tbsp sesame oil
- 1 tbsp sesame seeds (optional)
- Salt and pepper to taste
- Optional: red pepper flakes for a spicy kick
Instructions:
Prepare the Vegetables: Wash and cut the broccoli, zucchini, bell pepper, snap peas, and mushrooms. Chop the green onions and mince the garlic and ginger.
Heat the Oil: In a large skillet or wok, heat the olive oil or avocado oil over medium-high heat.
Cook the Aromatics: Add the minced garlic and ginger to the hot oil and sauté for about 1 minute until fragrant.
Add the Vegetables: Add the broccoli florets first and cook for 2-3 minutes. Then, add the sliced zucchini, bell pepper, snap peas, and mushrooms. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
Season: Pour the soy sauce or tamari and sesame oil over the vegetables. Stir to coat evenly. Cook for an additional 2-3 minutes.
Finish: Sprinkle the stir-fry with chopped green onions, sesame seeds, and red pepper flakes if using. Season with salt and pepper to taste.
Serve: Transfer the stir-fry to a serving dish and enjoy hot. This can be served as a main dish or as a side to your favorite protein.
