Turkey and Spinach Stir Fry
Ingredients:
- 1 lb (450g) turkey breast, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 onion, thinly sliced
- 2 cups fresh spinach leaves
- 1 bell pepper, thinly sliced (optional)
- 2 tablespoons vegetable oil, for cooking
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions:
Marinate the Turkey: In a bowl, combine the thinly sliced turkey breast with soy sauce and sesame oil. Mix well to coat the turkey evenly. Let it marinate for at least 15 minutes while you prepare the other ingredients.
Prepare the Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger to the skillet and stir-fry for about 30 seconds until fragrant.
Cook the Turkey: Add the marinated turkey slices to the skillet in a single layer. Cook for 3-4 minutes, stirring occasionally, until the turkey is cooked through and lightly browned.
Add the Vegetables: Add thinly sliced onion and bell pepper (if using) to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
Add the Spinach: Add fresh spinach leaves to the skillet. Stir-fry for 1-2 minutes until the spinach is wilted and the flavors are combined.
Season and Serve: Season the stir fry with salt and pepper to taste. Serve the turkey and spinach stir fry hot over cooked rice or noodles. You can garnish with sesame seeds or chopped green onions if desired.
