Spring always makes me want food that feels lighter — but still satisfying. Not fussy. Not complicated. Just fresh.

This dish comes together in one skillet, uses simple ingredients, and feels like something you’d serve for Easter — or just a Tuesday when you need a lift.

🛒 Ingredients

  • 3–4 boneless, skinless chicken breasts
  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ½ cup chicken broth
  • ¼ cup plain Greek yogurt (or light sour cream)
  • 1 tablespoon Dijon mustard
  • Salt & pepper to taste
  • Optional: red pepper flakes

🍳 Instructions

1️⃣ Season & Sear

Pat the chicken dry. Season both sides with salt, pepper, and Italian seasoning.

Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.

2️⃣ Sauté the Asparagus

In the same skillet, add asparagus and garlic. Cook 3–4 minutes until bright green and slightly tender.

3️⃣ Make the Sauce

Add chicken broth, lemon zest, and lemon juice to the pan. Let it simmer 2–3 minutes.

Lower heat and whisk in Greek yogurt and Dijon mustard until smooth and creamy.

4️⃣ Finish

Return chicken to the skillet. Spoon sauce over the top. Simmer 5–7 minutes until chicken reaches 165°F internal temperature.
